For this macaron I chose a medley of vanilla beans with three distinct flavor profiles:

- Highly regarded by chefs around the world, INDONESIAN beans are truly spectacular. The climate, soil properties, and curing practices all contribute to a unique smoky flavor with earthy undertones.
- The most popular of vanilla beans, the MADAGASCAR bean, has a creamy and clear bourbon vanilla flavor.
These three profiles tuck nicely into Valrhona IVOIRE 35% white chocolate and, when bitten, explode with fragrance and flavor.
