So good we had to bring it back! Round two of the green coffee brings together two amazing coffees from our friends at YUP Coffee Roasters, Florence, MA. This macaron contains two varietals of coffee. First, a green coffee from the Poço Fundo region of Brazil. Green Coffee has not been roasted and is fresh and vegetal with tasting notes of cocoa powder, almond, graham cracker & cherry. Second, the full medium roast of Papua New Guinea Timuza – with notes of sweet orange, peach, honey, and milk chocolate. Both coffees are each in their own ganache made with Valrhona Waina 35% white chocolate, which has distinctive notes of farm fresh milk and Mapleline Farm heavy cream.
