The Chocolate Chip Cookie
It’s Women’s History Month and to celebrate we created an homage to the chocolate chip cookie which was invented by Ruth Wakefield nearly 90 years ago in Massachusetts.
Getting a macaron to taste like a chocolate chip cookie was a fun experiment. First we started with Valrhona Opalys 35% “blonde” chocolate which gets its bronze color and distinct earthy flavor from a special ingredient: Mauritian Dark Muscovado Sugar. Next we made it into a creamy ganache by adding in light cream and some delightfully nutty browned butter. Then we stirred in some chopped bits of Guanaja 70% dark chocolate and smooshed it all between almond meringue shells topped with chocolate chunks. The result? A macaron that tastes just like The Chocolate Chip Cookie. I know I say it all the time, but this, this is unequivocally my all time favorite macaron.

In honor of WHM and the way I like to “balance” those macarons, we’ve decided to donate 25% of The Chocolate Chip Cookie Macaron’s sales to Girls on the Run, an amazing organization that creatively uses running to promote empowerment, character development, and confidence among girls in 3rd to 8th grade.
