February 26th is national pistachio day in the United States which makes no sense because we harvest in September and Australia harvests in February. Oh well, I’ll play along.

Pistachio will always be my performance litmus test as it was my first macaron attempt four years ago.

I followed a recipe off the interwebs which included a whole lot of green coloring in the ganache. Hilarious. You can still find it somewhere on my Instagram page.​

I persevered and this is the result: perfectly structured shell, creamy interior, homemade pistachio paste, amaretto, almond extract & Valrhona Ivoire 35% white chocolate.​​

I’m ecstatic, but alas, my pursuit of the “perfect” macaron continues.
